CHEF – ANCORA WATERFRONT DINING AND PATIO
Ancora Waterfront Dining & Patio is recoginzed
as one of the finest dining experiences in Vancouver, specializing in
innovative seafood with Peruvian and Japanese influences. We are looking for an
experienced Executive Chef.
The Executive Chef role includes (but is not limited
to) the following:
– Must be able to lead and manage a large kitchen
– Supervise sous-chefs, specialty chefs and cooks
– Ensure food meets quality standards
– Prepare and cook food on regular basis, or for
special guests and functions
– Responsible for food requirements and food cost
and labour costs
– Responsible for inventory counts and reports
– Create and write recipes and plan menus
– Control food production to achieve maximum
profitability
– Monitor, control, and enforce cleaning of all
kitchen areas
– Maintain excellent communications between front
and back of the house
– Recruit, hire and train staff
– Maintain dedicated and motivated staff
– Have a passion for food and service

At least 2 to 3 years previous experience as a chef/cook in a supervisory role is required
Cook trade certification or equivalent training and experience.
Clear conversational English language ability is required.

Ancora's cuisine manifesto is hinged on sustainable seafood, while sourcing local and international ingredients, and draws inspiration from its Pacific Northwest surroundings. Understanding the city's dining evolution has inspired Ancora to create a menu that accommodates all of its diners' culinary desires, combining flavours and techniques which embrace several diverse cultures in a modern, yet approachable setting.
Ancora False Creek’s dining space was designed with soft modern lines that embrace the warmth and richness of the city’s waterfront landscape. The interiors feature a subtle mix of soft blues, sand-inspired neutrals and light woods to thoughtfully reflect a gentle, coastal feel, and a serene but sophisticated style. Gorgeous fishnet-inspired crystal chandeliers were imported from Italy, along with custom-colour premium leather furniture sourced from Europe. The back feature wall in the lower dining room was enhanced with soft gold wall tiles that mimic the ocean’s waves. The bar, a mainstay of the room, was finished with rich walnut, faced with a unique, wood-mosaic tile, and topped with gorgeous onyx. Lighting underneath further highlights the beauty of the natural veining of the stone incorporated into the bar. Not to be forgotten, the private dining room brings an ambiance of upscale elegance that’s ideal for small parties or private get-togethers.
