Job Description

Overview We are seeking an experienced and dedicated 2nd Cook to join our culinary team. The ideal candidate is self-motivated, independent, and capable of making sound decisions while upholding Hilton’s policies and standards. This role requires advanced culinary expertise, strong interpersonal skills, and a passion for fostering a positive and collaborative work environment.

Key Responsibilities
Prepare advanced dishes and effectively manage any station, including:
Morning and evening garde-manager
AM or PM sauce station
Banquet prep shifts
Conduct butchery and fish processing, including breaking down secondary meat cuts and cleaning/portioning seafood
Ensure proper rotation of meats and fish
Test foods to ensure proper preparation and temperature
Monitor food quality and sanitation standards daily
Operate kitchen equipment safely and responsibly
Able to assist in other tasks if necessary such as prep or dishwashing
All other duties as assigned

Responsibilities & Qualifications

Must have a minimum of 2 years cooking experience- hotel or restaurant experience an asset
Ability to work flexible hours, including varied shifts and days
Knowledge of stocks, soups and sauces required
Able to work in a fast-paced environment when required
Able to stand for long periods of time
Able to grasp, lift and carry items
Capability to lift up to 50 pounds
Food Safe Level 1 current certification
Red Seal certification an asset
Workplace Hazardous Materials Information System (WHMIS) training -an asset
Can work independently sometimes with minimal supervision
Reliability and accountability
Promote enthusiasm and professionalism in the workplace while maintaining positive relationships with both Front of House (FOH) and Heart of the House teams
